Products with less than 40 % moisture can work by the principle of the dew point method. Products which have more than 40% in weight are the ones with high water activity and other moisture analysers would be a better buy. Products with less than 40% have water activity changes more sporadically as a result making the reading stronger and more accurate.
The instrument is light weight, compact and very user-friendly. A layman can sample with the same accuracy as a technician in the lab.
This makes the moisture analyser useable in any point of production line or even a supply chain.
